For larger workshops and supermarket central kitchens, the PHANTON / ROTANT configuration supports up to 18 trays per rotating rack. The motorized steam suction hood and integrated humidifier regulate chamber moisture and remove excess steam through a manual exhaust valve. This improves crust formation and internal crumb structure in bread and pastry applications.
Double-glazed doors limit heat loss while allowing product monitoring. Stainless steel baking chambers and base structures support hygiene compliance and simplify maintenance.
